Zangetsu

16-oz package cottage cheese (small curd)
8-oz package non-dairy whipped topping (coolwhip)
3-oz package orange flavored gelatin mix
Optional: 1 can mandarin oranges (drained)

Mix cottage cheese and whipped topping throughly, add gelatin mix, mixture will be pastel orange. Add the mandarin oranges, if desired.

Alternatively, you can omit the mandarin oranges and use other flavors of gelatin mix for variaty and a delicious rainbow of colors. Raspberry tastes exceptionally good.
